Robusta / Conilon coffee from northern Mato Grosso

Coffee is the cooperative's flagship product and the heart of the Carvalho Beans brand. It is grown by the families of our membership, then received, processed, stored and marketed by the cooperative.

Northern Mato Grosso is a transition zone between the Cerrado savanna and the Amazon. It is a region of steady heat, well-distributed rainfall through the wet season and deep soils, conditions in which Robusta and Conilon coffee grow vigorously. It is also a region where coffee lives alongside forest and other crops on the same property, rather than in continuous monoculture.

Every bag that leaves the cooperative can be traced to a member property. That is the practical difference in buying from a cooperative: the buyer knows where the coffee came from, and knows that the proceeds return to the people who grew it.

The cooperative concentrates harvesting, drying, processing, grading and packing in a shared structure, which is what makes it possible to standardise quality and offer consolidated volume to roasters and importers.

The terroir of northern Mato Grosso

For decades Robusta and Conilon were treated as volume coffee, destined for industrial blends and soluble. That has changed. Consistent work on selective picking, controlled drying and grading is producing Robusta coffees with dense body, underlying sweetness and a clean profile, capable of competing in the specialty market and in high-end espresso blends.

The cooperative is working in that direction: quality built through field management and post-harvest handling, with technical assistance in the field and standardisation in processing.

From tree to bag

  1. Harvest

    Picking on the properties of the membership.

  2. Drying

    Controlled drying down to target moisture content.

  3. Hulling

    Hulling and cleaning of the bean.

  4. Grading

    Separation by type, screen size and cup quality.

  5. Packing

    Bagging, origin identification and storage.

Sustainability and agroforestry

The cooperative's coffee is grown on family properties where the coffee field shares space with forest and other crops. One of the cooperative's social objectives, set out in its Bylaws, is to encourage environmental preservation and reforestation, including the production and marketing of seeds and seedlings.
